A South Indian Classic at Royal Indian Curry House 


On this visit to Royal Indian Curry House, I decided to go with something comforting and  traditional - a Masala Dosa

Tucked within Makati’s busy dining landscape, the restaurant offers a welcoming atmosphere that balances casual comfort with cultural richness. The interiors are warm and inviting... not overly extravagant, but thoughtfully put together. It immediately sets the tone for a relaxed, flavor-forward experience.

What arrived at the table was visually impressive: a long, golden-brown dosa, crisp on the outside and lightly soft underneath, folded over a savory potato masala filling. The surface had that perfect toasted gradient, slightly charred in places, signaling a well-heated griddle and proper technique.

The Dosa

The texture was spot on. Crisp at first bite, then yielding just enough as you tear through it. The potato filling inside was mildly spiced, aromatic, and balanced.  Not overly heavy, which allowed the condiments to shine alongside it.

The Sides

The dosa was served with three classic accompaniments:

Sambar – warm, comforting, and lightly tangy with lentils and vegetables. It had a clean, well-balanced spice level that didn’t overpower.
Coconut Chutney – creamy and mildly sweet, providing a cooling contrast.
Tomato Chutney – slightly tangy with a gentle heat, adding depth to each bite.

The beauty of a dosa experience lies in the mix-and-match.  Dipping, layering, experimenting. Each combination brought out a slightly different flavor profile.


Service & Hospitality

Equally impressive was the service.

The staff were genuinely hospitable and attentive without being intrusive. They checked in at the right moments, were knowledgeable about the menu, and maintained a welcoming tone throughout the meal. It made the dining experience feel cared for, not rushed.
